Denali Food Prep: Whats For Dinner??

Hey!  Beth here!

We have been working on food prep for the expedition, and as camp food prep is something I am good at, I have been helping out.  We are aiming for around 3,500 calories per person, per day.

Dehydrating Pasta with Red Sauce

We purchased a Nesco Food Dehydrator and have been dehydrating dinner meals of Pasta with Red Sauce and Burrito Filling (rice, beans, tomatoes and peppers).  We are adding TVP (textured vegetable protein) to a lot of the meals for extra calories and protein.  These meals will have around 600 calories and are considered FBC meals (Freezer Bag Cooking). This means my climbers just need to add water and rehydrate them into full meals.  When rehydrating they will also add 1 TBSP of Olive Oil (120 calories), some cheese (100 calories) and have at least one Tortilla (100-200 calories depending on size). This means dinner will be around 1,000 calories!  Add in the pre-dinner soup and maybe an after dinner candy bar and they will easily hit the dinner calorie mark!

Most dinners will also start with a pre-dinner ramen or soup.

What else is for dinner?

  • Mac and Cheese/Cheesy Pasta
  • Pesto Noodles
  • Black Bean Burgers
  • Variations on Burttios
  • Refried Beans with Fritos and Cheese

Sounds yummy, right?!
